Fusilli with Sun-dried Tomatoes

There’s something comforting about a stupid simple dish. I mean, originally this was supposed to be only pasta with olive oil and a little shredded parmesan. But it got overly complicated when I saw a package of sundried tomatoes in the pantry that I had to use, or it would’ve gone bad in the few days. Oh well… who’s complaining?

Ingredients: Fusilli Pasta, Julienned Sun-dried Tomatoes, Parmesan, Minced Garlic, Olive Oil, Parsley

Directions: Cook pasta. Sweat garlic in olive oil for a few minutes to infuse flavor. Mix in sun-dried tomatoes and cooked pasta. Transfer to a plate, add Parmesan and chopped parsley.

    This is one of my favorite weeknight dinners, sometimes with basil and pine nuts. Total comfort food.

    Nom. Nom. Nom. It all looks so good. The salmon with spinach looks fantastic. So does the chicken-fried steak. I’ve never had that but would love to try it. Great blog, Chris. And good on you for losing all that weight. 🙂
