There’s something comforting about a stupid simple dish. I mean, originally this was supposed to be only pasta with olive oil and a little shredded parmesan. But it got overly complicated when I saw a package of sundried tomatoes in the pantry that I had to use, or it would’ve gone bad in the few days. Oh well… who’s complaining?
Ingredients: Fusilli Pasta, Julienned Sun-dried Tomatoes, Parmesan, Minced Garlic, Olive Oil, Parsley
Directions: Cook pasta. Sweat garlic in olive oil for a few minutes to infuse flavor. Mix in sun-dried tomatoes and cooked pasta. Transfer to a plate, add Parmesan and chopped parsley.
