Strata Polenta

Here’s my version of a single serving strata. Quick and yummy! No need for a casserole.

Now, it may look complicated but it’s really not. Simply layer stuff on a plate, microwave for a minute and chow down! I had some leftover sausage links in the fridge and enough provolone for a couple of slices, so that’s what I used. In fact, you can layer this dish with whatever you have available. Just use polenta as a base and combine with pancetta or prosciutto. Or a breakfast sausage, for that matter. I have provolone at the moment, but I’m sure fresh mozzarella or any young melting cheese will do just fine.

Since there’s only a few ingredients used, make sure to use good quality ones, especially the provolone and pesto, then you wouldn’t even have to add seasonings. No added salt whatsoever.

Ingredients (1 serving):
3 slices of pre-packaged Polenta, 1 inch thick
1 Fresh Spicy Italian Sausage Link
3 teaspoons Basil Pesto Sauce
2 thin slices of Provolone, about 3-inch wide
Handful of Parsley Leaves
1/2 Lemon

Directions:
Cut the sausage link in half, then take off and discard the skin. Shape into two thin patties, about 3 inch wide. Cook both sides in a medium-heated non-stick skillet until golden brown, about 4 minutes on each side.

On a microwave-safe platter, place 1 slice of polenta in the center. Top with a teaspoon of pesto, a sausage patty and a slice of provolone. Once again, top with another polenta slice and repeat topping of the other ingredients. Then top the whole thing with the last polenta slice and the last teaspoon of pesto.

Put the plate in the microwave and heat in full power for about a minute or until the cheese is completely melted and sizzling. Squirt some lemon juice on top and garnish with parsley leaves.

Meatloaf and Polenta

For some reason, I don’t get to eat meatloaf that often. I mean, it’s one of the simplest things to make but it just slips my mind when trying to figure out what to have for dinner. So, one night I was watching Throwdown and the event was meatloaf. I thought, it’s about time I made one. And so I did. I just happened to have all the ingredients in the pantry, too. And so, off I went into meatloaf heaven.

By the way, I didn’t realize how good meatloaf is with polenta. Glad I had them cakes around. And those hand-crafted potato chips? LOL! I almost lost the tip of my finger thinly slicing those suckers (I can see a mandolin purchase on the horizon). Oh yeah, instead of ketchup, I used basil pesto sauce. Why? Well, just because I can.
